Lemon drizzle cake is a lemon-flavoured sponge cake that has been soaked in a lemon juice and sugar syrup after baking, often topped with a delicious lemony sugar crumb.

Should you keep lemon drizzle cake in the fridge?
Whilst not necessary unless you are adorning your cake with fresh lemons or other fresh fruit (we like blueberries with ours), keeping your lemon drizzle cake in the fridge can extend its life for an extra couple of days. As long as it is correctly packaged in clingfilm or an airtight container, lemon-drizzle cake can last for up to five days in the fridge.
Can you freeze lemon drizzle cake?
Luckily, lemon drizzle cakes are able to be frozen once cooked. It will keep in the freezer for up to a month (if you can hold off defrosting and eating it for that long!)
To ensure that it stays tasting fresh and avoids freezer burn, it is essential to properly package your sponge. Make sure that it is completely cool before wrapping it up so that it doesn’t run the risk of thawing out other items in your freezer.
Once it’s cool, wrap it in multiple layers of cling film and pop it in a freezer bag or durable plastic container, such as a tupperware box. Wrapping it properly provides the sponge with a protective barrier against any external elements. The addition of a freezer bag or airtight container prevents potential moisture or bacteria from getting in.
